When Life gives you Coeliac, Eat cake

And there are so many that us coeliacs can eat! With this blog I intend to note my fave gluten free recipes (and the ones that didn’t work out so well..) and some of my thoughts as I learn to accept a slightly different way of life (always carrying fruit bars or bread rolls…) Get in touch if you have any questions or recommendations!

Coeliac Disease is far more serious than a trending gluten free fad. It is an auto immune disease where gluten destroys the lining of the gut.

I was diagnosed with this one month before my 22nd birthday and it felt pretty rubbish! Most upsetting was realising all my fave foods were now banned from my diet! What on earth was left to eat that would satisfy my un-fussy love for food and flavour?….

Well, I’ve had a while to explore this and now take a completely different approach to this question. Instead of drooling over things you cant have, focus on those you can…or make it yourself!

The above illustration is of two field mice “Una” the gluten eating mouse and “Selina” the coeliac mouse. They are made up of the grains and foods they can eat.

Gluten containing products can be remembered with the acronym ‘BROWS’- Barley, Rye, Oats (although you can find gluten free oats), Wheat and Spelt. There are unfortunately other gluten containing products such as Bulgur Wheat, Couscous, Durum Wheat, Einkorn, Emmer, Kharasa Wheat, Pearl Barley, Semolina.

Gluten free ingredients include: Almond, Buckwheat, Chestnut, Corn, Flax/Linseed, Gram Flour, Hemp, Hops, Maize, Millet, Mustard, Polenta, Potatoe, Pulses, Quinoa, Rice, Sesame, and more!
