Oh my days, look at that glaze!
Aww, waving at my chocolatey reflection in my first Gluten free bake since my coeliac diagnosis!
Not one to do anything by half, I thought I’d ease myself gently into the Gluten free baking world, by creating a chocolate sponge cake with a chocolate mirror glaze.
I made this in 2016 for a family party, there aren’t many pictures as it was eaten before I could put it on the table, but I still thought it was worth adding to the blog as its the cake that got me excited to bake again!
So who did I turn to for my first gluten free bake, Mary Berry of course, for in Mary we trust! The only ingredient I changed in her recipe was the self-raising flour, which I made a gluten free self raising flour by Doves farm, important to note that all the other ingredients should be checked for gluten too.

Also I put this in the fridge, which took away its very shiny sheen so if you wanted to keep that, don’t put it in the fridge, not sure why I did anyway, I wouldn’t normally put a cake in the fridge, I must have been trying to protect it from someone…
